(Mostly) Healthy Dinner!

I have been living on candy and chai lattes for the past few days- I have no idea why- and yesterday my candy streak ended at P.F. Chang's in a pile of fried deliciousness and "asian" mojitos (I had to use a giftcard, otherwise I don't necessarily recommend that place-- unless you like all your food fried and drowned in sweet syrup). This morning my body seemed to yell at me for something healthy and/or vaguely sustenance-related, so I made a (mostly) healthy dinner:

Portabella Mushroom Ravioli from Fresh & Easy (love that place!) doesn't have preservatives and comes in a frozen package for the lazy cook (ahem, moi). I don't like foregoing my beloved bread and cheese, so this was a good compromise ;)


I melted a little butter (that's why I said "mostly" healthy) and added a little garlic to warm and mellow before tossing in fresh green beans and a little lemon juice to lightly sautee.


Finished! I tossed the rav's in a drizzle of olive oil and topped them with red sauce and a little shredded carrots. It was a gamble, but the carrots ended up being the perfect crispy balance for the soft rav's.

Green beans + Carrots + Mushrooms! My mom would be so proud ;)

  2. Delicious! We have a fresh and Easy down the street...I will have to try those out. We cook all the the time, and to me it is always healthier because you can control what goes into your food. But sometimes it feels good to be bad!! xo

  4. So healthy! I love fresh and easy!! I found the best little chocolate molten lava cakes there you just pop in the oven or micro and heaven! oops this was a healthy post! lol ;)
